Ingridients

  • 3 eggs

  • 1 tortilla

  • 1 tomato

  • 1/2 onion

  • LAmb lettuce

  • cheddar cheese (aprox. 4-5 pieces)

  • any type of salami (aprox. 2-3 pieces)

Instructions

  1. Prepare the “stuffing”:

    cut up the listed vegetables into smaller pieces and season them with a pinch of salt.

  2. Prepare the base:

    Mix the eggs in a bowl and add an inch of salt, before pouring the mixture into a preheated pan with olive oil.

  3. Let the mixture cook whilst placing the tortilla on top of the mixture.

  4. Flip the base of the tortilla side to let it bake.

    Add the cheese and salami, along with the cut-up tomato, onion and arugula, a only on one side of the base.

  5. Flip the empty side on top of the “stuffing” to enclose it, and Finish:

    Cook for about 2-3 minutes on each side, or until golden and cooked through.

  6. Serve:

    Serve with mozzarella and bell tomatoes.

Optional;

  • Add sauce or dressing of your liking (e.g. olive oil and balsamico)
