Instructions

  1. Prepare the sweet potatoes:

  2. Place the two sweet potatoes onto the baking paper on the baking tray and poke a few small holes with a fork in them.

  3. Drizzle with olive oil and a pinch of salt. Bake until soft.

  4. Prepare stuffing:

  5. Finely dice the peppers, feta and spring onions.
