  2. Prepare the salad:

    Cut up the tomatos and mix them with the matovilac, transfer them to an empty plate.

    Season the salad with a pinch of salt and a drizzle of olive oil and balsamic vinegar.

  3. Prepare the avocado:

    Cut up the avocado, remove the seed and scoop it out of its peel.

    Place half of the avocado onto the plate with salad and preserve the other half for future use.

  4. Prepare the bread:

    After frying the eggs, transfer them to a plate with the salad and avocado and season with Mediterranean seasoning.

    Slice two pieces of the bread and place them on the pan.

    Wait until the bread pieces get a golden hue and get a crispy look.
