  • 2 tomatoes

  • olive oil

  • salt

  • pepper seasoning

  • basil

  • pesto

  • cottage cheese/skyr

  • balsamic glaze

  • bread; preferably english muffin or brown grain bread

  • seedless olives

Instructions

1. Take care of the tomatoes:

- Cut up the tomatoes into tiny pieces and place them in a bowl.

- Spray them with olive oil, season with salt, pepper and basil and mix.

2. Toast the bread:

- Toast your bread on a pan or in a toaster and wait till the toast is done.

3. Apply a coating to the bread:

- (IF ENGLISH MUFFIN) evenly spread 1 1/2 teaspoons of pesto on each piece and top it off with 1 spoon of Skyr and add tomatoes on top.

- (IF BROWN BREAD) evenly spread 1 spoon of pesto on each piece and top it off with 1 spoon of Skyr and add tomatoes on top

4. Add the balsamic glaze

5. Serve:

- Serve with mozzarella balls toped off with a little olive oil and seadless olives and enjoy.
