  • premade Teriyaki chicken

  • 1/2 avocado

  • paprika seasoning

Instructions

1. Prepare the roll base:

- Wash and peel the cucumber into thin pieces and put them on the cutting board, halfway on top of each other vertically to form a base for the rolls.

- Dry with a paper towel by placing it over the cucumbers and lightly pressing onto the base.

2. Making the stuffing:

- Cook the 2 eggs for 7-8 minutes, afterwards peel them and place them in a bowl.

- Place 2-3 spoons of Skyr in the bowl and season with Mediterranean seasoning and a little bit of paprika seasoning.

- Smash the eggs and mix the sauce base until it’s only made of small pieces.

- Take half of an avocado, scoop it out of its “shell” and cut into vertical long pieces. Place them aside for now.

3. Adding the stuffing on the cucumber base:

- Firstly, place the egg mixture onto the cucumber base and spread it evenly on one half of the cucumber base.

- Add a layer of the precooked Teriyaki Chicken and top it off with the slices of avocado and 2 teaspoons of Skyr

4. Roll it!

-Roll the cucumber base over the stuffing, making a long thick roll.

5. Cut up the roll and serve:

- Cut it into smaller rolls and serve either warm or cold with Skyr {optional}
