Chicken

  • 2 large chicken breasts

  • 1–2 tsp olive oil (for searing)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning (or oregano + basil mix)

Topping

  • ½–1 cup marinara sauce (Barilla Basilico)

  • 1 cup shredded mozzarella

  • 2–3 tbsp grated Parmesan

  • Fresh basil (optional)

  • Cottage Cheese

Instructions

  1. Prep the Chicken
    Preheat oven to 220°C.
    Pound chicken breasts to an even thickness (about 1–1.5 cm).
    Season both sides with salt, pepper, garlic powder, and Italian seasoning.

  2. Sear the Chicken (optional, but adds flavour)
    Heat a pan with 1–2 tsp olive oil.
    Sear chicken for 1–2 minutes per side until lightly golden.
    Transfer to a baking tray.

  3. Bake the Chicken
    Bake for 12–15 minutes, or until the internal temperature reaches 74°C.

  4. Add Sauce & Cheese
    Remove from the oven.
    Spoon 1–2 tbsp marinara sauce onto each piece.
    Top with shredded mozzarella and a little grated Parmesan.

  5. Melt the Cheese
    Return to the oven for 5–7 minutes, or until cheese melts and bubbles.
    Broil for 1–2 minutes if you want it browned.

  6. Serve
    Top with extra Parmesan and basil if you like.
    Serve warm with salad, veggies, or pasta.
